whole roasting chicken (3 or 4 pounds) 1 onion 4 tb butter Cooking oil 1/2 tsp of salt |
Step 1: Preheat oven to 400 degrees F
Step 2: Put inside the chicken 1 tablespoon of butter and a pinch of salt. Rub the skin with 1 tablespoon of butter.
Step 3: Place the chicken and a peeled onion in a roasting pan. Cook in the oven for 15 minutes. Pour over the chicken 2 tablespoons of melted butter and one tablespoon of cooking oil.
Step 4: Reduce heat to 350 degrees F. Cook for 30 minutes for a 4 lb chicken, 20 minutes for a 3 lb chicken. Pour the fat in the pan over the chicken every 10 minutes. Add a pinch of salt. Turn the pan. Cook for another 30 minutes for a 4 lb chicken, 20 minutes for a 3 lb chicken.
Serving: Usually served with green beans, fried or roasted potatoes.
